Nộm đu đủ (Green Papaya Salad)

Serves 4 as a side salad.

1/2 green papaya, peeled and grated

1/2 carrot, peeled and grated

1 tablespoon salt

1 cup of ice

Small handful bean shoots

3 shallots, thinly sliced

½ long red chili, seeds removed and finely sliced

2 garlic cloves, chopped

½ cup coriander, roughly chopped

1/2 a cup of mint leaves

2 tablespoon peanuts, roasted and chopped

2 tablespoon shallots

Extra peanuts


3 tablespoons sugar

2 ½ tablespoons lime juice

2 tablespoons fish sauce

Prepare papaya & carrot: Place grated papaya & grated carrot in a large bowl with the salt. Cover with cold water, add ice and leave to soak for 5-10 minutes. Drain, rinse and gently squeeze out excess water.

To the bowl with the prepared papaya & carrot, add with the bean shoots, shallots, chili, garlic, coriander, mint leaves and peanuts. Mix well by hand.

For the dressing combine sugar, lime juice and fish sauce in a small bowl and stir until the sugar is dissolved.

Pour dressing over salad ingredients and gently toss.

Serve in a large bowl sprinkled with the fried shallot and extra peanuts.
